Pumpkin Pancakes with Maple-Pecan Syrup
Great any time of the year!
4 cups of any prepared pancake mix
1/2 cup firmly packed brown sugar
1 tbsp cinnamon
1/2 tsp powdered ginger
1/4 tsp allspice
1/2 tspn salt
a pinch of ground nutmeg
1 can pumpkin puree (not pie mix)
1/3 cup sour cream
1 tsp vanilla
1 - 1 1/2 cups milk
vegetable oil for cooking
Combine the dry ingredients in large mixing bowl.
Combine all the wet ingredients, then mix them with the dry ingredients until just blended.
Heat oil in a frying pan or griddle on medium high heat. Pour batter by 1/4 cups onto lightly greased hot pan or griddle.
Turn when bubbles form on top of pancakes.
Serve with warm Maple-Pecan Syrup.
1 cup maple syrup
1 tblsp melted butter
1/4 cup chopped pecans
Mix all ingrediets in saucepan.
