2 cups AP Flour
2 tsp Baking Powder
1 tsp Salt
1/4 tsp Baking Soda
7 Tbsp. Unsalted Butter, chilled, cut into thin slices
3/4 Cup Cold Buttermilk
2 Tbsp. Buttermilk for brushing
Preheat oven to 425 degrees
In a large bowl combine flour, baking powder, baking soda and salt. Mix well with a whisk. With a pastry cutter/blender, cut butter into mixture until it begins to look like coarse crumbs, about 5 minutes.
Make a well in the butter/flour mixture and add buttermilk. Knead dough with fingers until it just comes together.
Turn dough onto a floured surface and pat together into a rectangle.
Fold the rectangle into thirds. Turn dough a half turn and pat back into a rectangle.
Repeat twice more, folding and pressing dough a total of three times.
Roll on a floured surface to ½ inch thick. Cut out 12 biscuits using a 2 ½ inch round biscuit cutter
Arrange biscuits on a parchment lined baking sheet. Make an indentation on top of each biscuit with your thumb. Brush tops with buttermilk. Bake in the preheated oven until browned, about 15 minutes.
